Back to the origin, we’ve fine selected the coffee cherry (ripeness cherry) from the highland area of northern of Thailand. At this point, the whole premium Arabrica beans were started. We understood that we could not get the best quality from the roasted bean unless the selected raw cherry and the downstream process have not originally qualified in the process and conditions. That’s why the fully Wet Method was selected to do the green beans (somewhere else also called “cleaned coffee”). After getting the green beans, the grading (sorting) process was performed and then keeping the selected beans and do the aging for every batch at least a year in order to get the bean in good absorption and taste. After complete the required aging, the roasting process will be begun. For the roasting process, our roasted beans have roasted by the standard commercial roaster and controlled by the expertise roaster. Also, we’ve roasted, depend on the small usage volume or the bill ordering to guarantee all freshness for every coffee cups. |
